Level: Medium
Prep Time: 30 minutes
Cooling time: 6 hours+
Ingredients:
Pineapple
- 1 can Coconut Milk
- ½ tablespoon Cornstarch
- 3 tablespoons Honey
- A pinch of Salt
- (OPTIONAL)1 cup Desiccated Coconut (you can also use coconut meat or fresh grated coconut)
- 1 can crushed Pineapple
Durian
- 1 can Coconut Milk
- ½ tablespoon Cornstarch
- 3 tablespoons Honey
- A pinch of Salt
- (OPTIONAL) 1 cup Desiccated Coconut
- 1 bowl of seedless Durian
Chocolate
- 1 can Coconut Milk
- ½ tablespoon Cornstarch
- 1 teaspoon Vanilla Essense
- 3 tablespoons Maple Syrup (you can just use honey)
- A pinch of Salt
- 2 tablespoons Cocoa Powder
- 3 tablespoons Milo
- Optional - crushed chocolates!
How to do it:
- Simmer coconut milk and leave some in a bowl
- Put cornstarch into the bowl of coconut milk to make slurry
- Add the cornstarch slurry and simmer until cornstarch is cooked. One way to find out is to see when it thickens or becomes shiny. Mixture will stick at the back of the spatula more and be less runny
- Turn off the heat and add honey, salt, and desiccated coconut. For the chocolate flavor just add the rest of the ingredients and mix well.
- Pack it into plastic tubes or much better, buy popsicle holders and easily put it in!!!
- Freeze for at least 6 hours or until you feel like it. meh.
