I got this tips from Gordon Ramsay's cooking, and the trick is easy.
The trick is to fry them twice! Yes, twice. How?
- Once you got your potatoes cut and washed or just some store bought frozen potatoes, make sure it is dry/set to room temperature.
- Then, deep fry the potatoes on medium to high heat, for about 5 minutes or until you can see slightly darker tone from the original colour of the fries.
- After that, get the fries out from the oil, and let it rest for a minute or more.
- When that is done, turn up the heat to the max, and put in those rested warm fries! Just make sure not to overcook them! Check on the heat at all times. If it gets golden too fast, lower heat a little bit or turn the stove off. Then, cook until it is golden brown in colour.
Wallah, you now get you own crispy potato fries!
